Build the quote

Run the event
The morning of, the BEO appears on the kitchen's tablet — full menu, timing, dietary asterisks. Mark items fired, plated, cleared; the client gets a satisfaction survey afterwards.
Gotchas & tips
Off-site events still touch your inventory. Linked recipes deduct stock — make sure the prep team accounts for transport waste.
Don't forget travel hours when staff line items are off-site. The labour-cost forecast is wrong without them.
